Whole Duck Foie Gras Grade "A"

This fresh duck Grade "A" foie gras is very tasteful with a pleasant cream color and a firm texture. The liver, which is immediately removed from the animal's carcass, is allowed to cool by a steady reduction in its surrounding temperature. One hour later, the liver is flash-frozen, then skin-packed to retain its fresh flavor and aroma. Many of Fabrique Delices products have been served at the White House, on the Air France Concorde and even to his Holiness John Paul II. Fabrique Delices was also a proud supplier of the 1996 Atlanta Olympic Games.
