Origin: China. It is know under six different types. The Chinese variety, from Szechuan, with peppery and lemony accents, is recognized as the best. Use in cooking: fresh lemony flavor, Szechuan pepper is wonderful with young asparagus or artichokes. It also spices and enhances fish with a subtle flavor, as well as chicken or even foie gras.
