This is one of the best mozzarella cheese, if not the very best.
My very favorite use of this mozzarella cheese is salad of this mozzarella cheese with fresh Roma tomatoes fresh Basil leaves and simple salt and pepper. It is a very popular salad and a healthy one at that.
Also it is very tempting to the palette.
Tonight I've been having cravings of cheese,which is my most common craving,so I'm reviewing my choices of good and delicious cheeses.
I hope you try it and enjoy it as much as I do. Highly recommended!

A nutty taste, a clean fresh cool cheese-ness and the wonderful way that the cheese "splits" into spirals (only if you want it to) -- sliced and placed on a plate with fresh basil and sliced Roma tomatoes -- it's a meal in itself -- drizzled with olive oil, it is unforgettable!!

By Hankk Buffalo mozzarella is great -- very different than cows-milk cheese, a bit more farm-y and sheep-like. This cheese is fresh and tasty.
Be aware that if you have a Trader Joe's nearby, you might want to check them before ordering it here. When they have it, my local store sells it for 1/5 the price of the air-shipped price from this Amazon vendor. Same product, same packaging.

By Eileen I've been dying for this since leaving Rome. There is nothing like mozzarella made from water buffalo milk - when you cut it it drips with milky curds almost like melted butter. Drizzle a little of your best olive oil and serve. Eat it fast, this came from the region of Italy known for this product. Others can't compete, fresh mozzarella is not even close. Its got to come from the swamp water buffalo. Who needs caviar, spend your money on this delicacy and you will not be disappointed.

By skeptic Here are my problems which maybe someone can answer for me. I have bought imported buffalo mozzarella from three different places two were grocery stores and one was this pastacheese.com. The intention all three times was to make a pizza. Now I know fresh mozzarella is really only stable for about 48 hours, and the ones I bought at the grocery stores, had the texture of ricotta. It fell apart when baked and exuded water (though both times i strained the cheese over night). They soaked the pizzas. Flash forward to this company. They fly their mozzarella in every Thursday I had overnighted, and go it on friday. The first concern I had is the packaging says check the embossed date for expiration, which I could not find on either of the packets I received. Secondly, the mozzarella was packed in water(which is common and occurred in all three instances). I strained the cheese over the course of the afternoon, before making my pizzas. It exuded water, however it did not completely soak the pizza, and did not fall apart. There was a little dampness towards the center, but it could have been worse. Today, however, there was a little dough left and a little cheese (that had drained all night), so I made another pizza and even though after baking it, I immediately started sopping up water with paper towel, the pizza was delicious but soggy, cheese still did not fall apart, but once again soggy. So this cheese does not last long after opening, it tastes incredible, it has a sour sort of cultured note, that on the pizza mellowed and gave great complexity to the dish. However, use it quick. I am not sure if it is available at your local grocer, but if it is, pastacheese's quality probably isn't any better than the cheaper stuff that wasn't flown in once a week from Italy at your local trader joes etc. It's good but I am not sure it is worth the expense, you can't use it on pizza without getting the pizza soggy. So I know it got great reviews from other people, but if you are applying this cheese for the same purpose, head my warning, get real fresh mozzarella made from someone in your area, it may not have the cultured sophisticated high fat pleasing quality of this cheese, but your pizza will be dry and satisfying every time!
